Exquisite Dining on the Mountain @ CLOUD DINE

If you haven't been to Cloud Dine Restaurant at the top of Dream Peak, by the DreamCatcher and DreamScape Lifts, then you don't know what you're missing. For those of us who look forward to a healthy, delicious, gourmet meal after a few hours on the slopes, the new and improved menu at Cloud Dine focusing on healthy soups, salads, gourmet pizzas and sandwiches with a culinary twist is a dream come true.
Cloud Dine, first introduced in 2011 was completed remodeled this past summer as part of a $50 million investment by Vail that included connecting the Canyons Village to Park City Mountain, transforming our ski resort to the largest in the U.S. with over 7,300 acres of skiable terrain.
If you'd like to replicate the scrumptious Tuna Salad Nicoise at home, here is the recipe courtesy of the Park City Mountain Website:
Tuna Salad Nicoise
20 oz Ahi Tuna Season with Salt and Cracked Black Pepper
Pan sear on high heat for 30-45 seconds on each side
Red Wine Mustard Vinaigrette
½ Shallot Minced
1 Garlic Clove Minced
2 Tbls Whole Grain Mustard
½ Cup Red Wine Vinegar
3 Tbls Red Wine Salt Cracked black pepper Vigorously whisk while adding 1 Cup Oil
Combine: 2 Heads Bib Lettuce , 8 Oz Olives 8 Oz Baby Tomatoes, 1 Red Onion, 8 Oz Green Beans, Cracked black pepper, Salt, 8 Oz Marble Potatoes, 1 Hardboiled egg
